Can I engage in visualization and/or meditation while listening to UMS V2?

Can you?  It is possible.  Should you?  Not if you want the visualization or meditation to be worth a damn.  If you're going to do those things, do them right before running UMS.  Even then, be careful that your visualization isn't trying to disagree with UMS in some way, because UMS will destroy the results if they do.
