If we're supposed to be as close to 32 days per stage as possible, and UMS Stage 2 takes 7 days per cycle, we're supposed to do 5 cycles, correct? 35 is closer than 28.

That depends on which month you're doing it in.  28 to 31 days in a month.  I suggest that since this program is designed and intended to be cycled through multiple times anyway, it is better to finish the cycles before or on the last day of the month, and then start the next stage.  This way you can get the results and keep easier track, and you won't have to worry about a subscription being necessary for an additional month just to listen for a few days if you are accessing it through a subscription.
