I learned body language primarily by simply paying attention and studying the psychology of the subconscious. There are books you can read, but most books I have found are either incomplete, contradict other books, or do not have sufficient descriptions of what you're looking for. The best thing I can suggest is read every book you can get your hands on, and then spend significant amounts of time observing people like I do.
The other one was, it is possible that some of those signals were simply showing focus. The tilt of the head and the way she licked her lips suggest focus more than attraction, but the others suggest focus within a context of attraction.
