I am dealing with a similar problem, every time I "fail" to complete a task in the way I envisioned it I am left feeling defeated. It's surreal because often I did complete the task, not just exactly in the way I wanted/planned to do it.
What works for me is interrupting this pattern of doubt and defeatism with something, a walk/gym/whatever floats your boat. And then look at what's the next goal after this task I "failed" at. More often than not I realize that the way towards the next goal is clear and that I really did complete the task in a sufficient way to move forward. That's what counts.
Or as the saying goes: One can work with that.
