There are many little tricks to stave off aging, like the Five Tibetan Rites of Rejuvenation which are said to optimize hormones while also circulating and cleansing the lymph. If the sages of the East have had experience with extreme longevity, then we know it is possible but requires conscious action as well.
Personally my biggest take on anti-aging is removing toxins from the body/blood/lymph as priority number one.
Yes, I fast every day by not eating breakfast. I've been doing this for three years now and feel much better. I have more energy, fewer headaches and just feel younger. I don't like fads either, which is why I went paleo. How can that be a fad if it's what we ate for hundreds of thousands of years before we became 'civilised'? For me wheat and sugar are the fads! It may have been crucial in the development of civilised society, but had many bad effects on health, especially as the grain was selectively bred over millennia for higher yield. I'm also low carb/low sugar and high fat, because that is the way primitive societies got their energy. That has also helped me greatly.
Regarding epigenetics, you should try to look into Bruce Lipton's work if you get the time, because it is exciting stuff. There are some good videos and he has written several books. Here's a short quote from an interview with him:
