I find that usually when they stop being playful and start getting upset, when you haven't done anything differently, it indicates that either you've taken something too far or they've become too emotionally invested to take it as fun anymore. Now they want to move on to something deeper emotionally. Typically in this latter situation, it's her way of saying, "Alright, I'm attracted now, let's stop playing games and do something worthwhile."
